Tax Day

So apparently my taxes are due tomorrow. Who knew?! I better get going on them.

But first I will waste some time. So last night I decided to recreate this delicious slaw we had at the Fremont Market from the big, silver PIG mobile that was served with a somewhat equally delicious veggie sandwich. But this slaw had tang, sweetness, spice and texture. TSST. And then some yumm....

So this is what I came up with:
1 head of cabbage, chopped/shredded
1 bundle of radishes, slivered into small pieces
1 small bundle of cilantro, chopped (~1-1.5 cups)
3-4 T toasted sesame seeds
Zest of two small lemons and 1 small lime
Juice of two small lemons and 1 small lime
Splash of red wine vinegar
Couple splashes of apple cider vinegar
Couple sprinkles of cayenne
A good pour of soy sauce
3-4T extra virgin olive oil
Squeeze of honey
Salt & Pepper to taste

And oh yes, it was good. So I made this last night and it made a pretty big batch. It is now gone. Yes, we are the offical piggy noshers!!
